Emmanuela served for several years as the Director of Special Projects at Greater Newark Conservancy, where she led urban farming and nutrition education programs. In 2012 she was diagnosed with Crohn's Disease, a serious digestive disorder. She is now in symptomatic remission and medication-free by following the autoimmune paleo diet (AIP). Driven by her own healing journey and a passion for real food, she co-founded paleyobakery, LLC, the first frozen plantain waffle and batter company in the country. Emmanuela will discuss the basics of an AIP elimination diet, meal planning on a grain-free diet, and will provide samples of her amazing allergy-friendly products.
